Chocolate Coconut Pudding

 

You know how they say you are either into savoury or more of a sweet tooth?

I was always on the savoury side and can live without having anything sweet for days. This changed towards the last trimester of my recent pregnancy, I found myself leaning towards sweet tasting food. Galloping more dates and craving chocolate!
Two months postpartum and I can't shake it off!! I'm not sure if the switch is hormonal or not but for now it is what I am left with.

This is why I am starting to create more sweet recipes that are clean, filling and have no refined sugar in them.

This decadent pudding hits all those sweet spots including being easy requiring 3 ingredients only!  

This recipe is dairy free, gluten free and refined sugar free.

Recipe

For the pudding:

1 can organic whole coconut milk 
5 tbsp organic unsweetened raw coco powder
3 tbsp organic maple syrup 

The toppings:

Raw unsalted pistachio
Organic strawberries cut into halves 
Chia & Hemp seeds

Note: this will taste more on the bitter chocolate side which I personally prefer buts if you want it to be sweeter you can serve it with a drizzle of maple on top.

Makes 4-5 servings


Method

1- In a mixing bowl pour the coconut milk and give it a quick stir.

2- Stir in the cocoa powder one table spoon at a time for it to combine well and mix it well  (you can use a handheld mixer but it was easy to mix by hand)

3- Add maple syrup and mix.

4- Pour the pudding in serving cups and place them covered in the fridge for 2 hours at least.

5- Serve them with pistachios, strawberry slices and sprinkle  with chia & hemp seeds*

 

*The toppings are optional and you can choose any other nuts or fruits that you enjoy.
